Our Process

We use a two-stage process: a commercial degreaser soak followed by high-temperature pressure washing or hand scrubbing depending on the surface. Everything is done after close so surfaces are ready for morning.

We apply a commercial-strength degreaser to all target surfaces and allow proper dwell time for the chemical to break down grease buildup before scrubbing.

Equipment Movement and Floor Access

Movable equipment is pulled away from walls to access grease buildup underneath and behind units — the areas most commonly missed in regular cleaning.

Scrubbing and Pressure Cleaning

Surfaces are scrubbed or pressure-washed depending on the material. Floors, walls, equipment exteriors, and drain surrounds are all addressed.

Drain and Grease Trap Service

Floor drain surrounds are cleaned. Grease trap areas are degreased. We do not pump grease traps, but we clean the accessible surrounding surfaces.

How is this different from what my kitchen staff does nightly?

We use commercial-strength alkaline degreasers and pressure equipment that remove the deep grease layer that builds up under and behind equipment over weeks and months. Daily cleaning maintains the surface — our service removes the accumulation.
